@AngiraBlu I haven't actually watched the anime trilogy, but I have read up on the story and characters and such, so I feel I pretty much know what it's about and what's involved. And I personally don't like it. Just some of the concepts themselves make me facepalm.

Admittedly, there are some concepts that I think could have worked...but I don't think they were realized particularly well. Let's look at the ones you listed.

"What if King Ghidorah was an eldritch energy being that devoured planets, like Galactus and Unicron?" I don't know who those last two are, but I actually love the idea of Ghidorah being an eldritch monstrosity. I'd totally be down for that. Maybe have him possessing people or even monsters to his bidding. I liked the concept of the aliens being under his control rather than the other way around.

"What if Mechagodzilla was built by both humans AND aliens and was made out of a nanomachine-based metal that could evolve?" There's another one that I like. A combination of his Showa and Heisei/Millennium origins. And I like the idea of the nanometal as well; imagine Mechagodzilla suddenly growing a Gipsy-Danger style sword out of wrists, or being able to regenerate broken pieces of machinery in a fight or whatnot. That I like.

But then there's other stuff that I just don't think works. "What if Godzilla was a mountain-sized plant with electromagnetic abilities?" From the get-go, that sounds sounds nothing like Godzilla. Part of what makes Godzilla work is that he's almost always an allegory for nuclear power in some way, or is at the very least a prehistoric force of nature. Suddenly switching him from an irradiated prehistoric reptile to a hyper-evolved electromagnetic plant just demolishes the character entirely. If you wanted to see that, then why not just make a completely new monster and give them those attributes?

If you like the Anime trilogy, that's fine. It's totally within your right to do so, and I know you have your reasons. But I don't like it, and I have every right to do so as well, and I have my own reasons.

That, and I'm just not into anime anyway.
