Hello ABB, I wanted to ask how the history sections of the characters from Monarch should be handled as all of them have at least one episode that occurs out of order chronologically from the rest of the show's timeline (especially Shaw).

The aim with Monsterverse pages going forward is to present histories using in-universe chronology, since the franchise's media is constantly jumping around the timeline. Section headings will thus be descriptive instead of just being named after media (here's a taste of how that's going to look for Godzilla), with citations used to clarify what media or episode is being described at any given time (see Godzilla's revamped origins section for examples). So for Shaw, you'd start his history with the flashbacks in episode 2. I think he'd warrant three sections: the first covering everything up to his exit from Axis Mundi, the second (short) covering his return to the surface world in 1982 and internment in Monarch's "retirement home," and the third covering the rest of the show's events. You'll also want to acknowledge the contradictory history of the character in Awakening in the first two sections.
