In honesty, I don't know if there's any interesting observation to be made. She is verifiably not among the top 3 largest Godzilla monsters even if you exclude Godzilla himself; Tiamat, Na Kika, and anime Ghidorah are all longer. (I think it would be disingenuous to disqualify those just because it's a measurement of length and not height. If Ghidorah positioned itself upright, for example, it would still be miles 'taller' than Shimo.) And then as you said, there are creatures without confirmed measurements who are still certainly taller, so she's not even within the top 5.

The absolute most generous trivia item I can come up with is that she's "the second-largest opponent of Godzilla to appear in a film." I don't know if something with that many caveats is even worth mentioning.
